Moi Moi is a Nigerian pudding meal usually made using Beans. Plantain moi moi is a variation of this, except it is made with plantain. The good thing about this is that you don’t have to waste left over plantains as over-ripe plantains work well with this meal. It is delicious and quite easy to make.

INGREDIENTS
- 4 Overripe Plantain
- 1 Red Bell Pepper
- 2 Scotch Bonnet Peppers
- 1 Medium Size Onion
- 2 Seasoning Cubes
- Salt to taste.
- 2 Tablespoons Ground Crayfish
- Nosak Famili Palm Oil
- Few pieces of smoked catfish or any fish of your choice.
- 1 Cup of Cornmeal (or you can use Plantain Flour)
FOR WRAPPING
- Moi Moi Leaves/ Cup Cake Tins /Aluminium Foil/Plastic Moi Moi Bowls
COOKING DIRECTION
- Peel the plantains and cut them into small pieces.
- Wash and debone your smoked fish and set aside.
- Then clean the onions and peppers and place in a blender, add enough water to allow the blades move smoothly and grind. Add the plantain pieces and blend till smooth.
- Mix plantain flour/corn flour with water in a small container and stir until it forms a thick paste.
- Pour the blended plantain into a medium sized bowl. Pour the flour paste and mix well. Add crayfish, crushed smoked fish, seasoning cubes, salt and mix thoroughly. Then pour in two tablespoons of palm oil and mix well until incorporated.
- Bring a pot of water to boil on medium heat and place a rack that fits into the pot to ensure the wraps don’t touch the base of the pot.
- Fill the cupcake tins with the pudding mixture, cover with aluminium wraps and place gently in the simmering water.
- Allow to cook for 25-30 minutes; until a toothpick poked in the pudding comes out clean. Add more water when needed until it is well cooked.
- Leave to cool and serve with Custard, Oat Meal or enjoy alone.
