Shawarma is originally a Lebanese food but like several other imported recipes, it has been adopted by Nigerians and has quickly become a major local food. Chicken Shawarma is made using Chicken filling but you can substitute this with beef, depending on your taste. Nigerian Shawarma is really spicy and delicious but don’t take our word for it, try it out yourself!

INGREDIENTS

Chicken Marinade

  • 1 Small Onion
  • 3 Cloves of Garlic
  • 1 Teaspoon of Thyme
  • 1/2 Teaspoon of Curry
  • 1 Teaspoon of Parsley (optional)
  • 2 Seasoning Cubes
  • 1 Teaspoon of Salt
  • 1/2 Teaspoon Ground Cayenne Pepper
  • 1/2 Teaspoon Black Pepper

Shawarma Sauce

  • Mayonnaise
  • Any Sweet Chilli Sauce (Optional)
  • Ketchup
  • Salad Cream (optional)

Vegetables

  • 1 Medium Sized Cucumber
  • 3 Large Carrots
  • 1 Small Cabbage
  • 3 Medium Sized Green and Red Bell Peppers
  • 1 Onion
COOKING DIRECTIONS
  1. Wash and debone your chicken, cutting them into small slices, then set aside.
  2. Blend your garlic and onions and set aside.
  3. Then, place your diced chicken in a bowl. Add salt, blended onions and garlic, seasoning cubes and dry spices (thyme, curry, parsley, cayenne pepper, black pepper) into the chicken.
  4. Cover the bowl with a plastic wrap and keep in a cool place to marinate for about an hour.
  5. Wash your vegetables (bell peppers, carrots, cucumber, cabbage). Chop the cabbage and onions, grate the carrots, dice the bell peppers, slice the cucumbers and set them aside.
  6. Next, place a frying pan on medium heat and add 1 tablespoon of vegetable oil. Leave to heat for about 2 minutes, then add the marinated chicken to the pan and stir fry on both sides for 2 minutes each.
  7. For the sauce, mix the mayonnaise, sweet chilli sauce, ketchup, salad cream and parsley in a bowl. Stir well and set aside.
  8. Then, get one flat bread and separate the two pieces. Place one wrap on a flat surface and add the filling in layers, start with rubbing the sauce over the top of the bread, then add the chicken, sauce again, vegetables and more sauce. Fold the edges of the bread to seal the contents.
  9. Place the Shawarma in a lightly greased pan and allow to heat up, beginning with the side with the open flap. Flip and do the same for the other side. Otherwise, you could grill for 5 minutes.
