Groundnut soup is another delicious Nigerian soup eaten by several Nigerian tribes like the Hausas (they call it Miyan Geda), the Esans in Edo state and some tribes in Delta state. This soup is slightly sweet as opposed to most Nigerian soups but it has a taste unlike any food you’ve ever eaten. Our Groundnut Soup recipe makes use of vegetables since most people like it with them. However, you can leave the vegetables out if you want.

INGREDIENTS
- 2 Cups Raw Peeled Groundnut
- Assorted Meat
- 500g Dried and Stock Fish
- 3 Tablespoons Ground Crayfish
- 1/2 Sliced Onions.
- Nosak Famili Palm oil
- Spices (Ginger, Garlic)
- 2 Tablespoons Locust Beans (Daddawa )
- Vegetables (Spinach/Bitter leaves/Pumpkin leaves)
- Ground Cayenne/Fresh Habanero Peppers (Half cup)
- 2 Stock Seasoning Cubes
- Salt to taste
COOKING DIRECTIONS
- Get your raw groundnuts and roast in a pan till slightly brown but not too browned. Make sure to stir constantly to avoid burning. Roasting it allows easy grinding and releases its flavour (you can as well skip this step if you want to).
- Then, place the groundnuts in a blender and grind till smooth. Set powdered groundnut aside.
- Boil your white hibiscus separately with just water (if you are using it). Add a little potash to get rid of its natural sourness. Wash thoroughly when it is done.
- Wash and cook your stock/dry fish until it is soft.
- Cook your meat with seasoning (stock cubes, salt, ginger, garlic) and a little water. Add the cooked stock/dried fish and allow to simmer together.
- Transfer the meat and fish to another container leaving only the stock in the pot. Add the grounded pepper, crayfish, sliced onions and allow to boil for a few minutes.
- Then, add the grinded groundnuts and stir very well. Keep the heat low and watch constantly to avoid burning. Add water if necessary.
- Cook till a thin film of oil appears on the surface. Add palm oil and allow simmer for a few minutes.
- Add the cooked meat and fish, stir and cook well. The soup is ready at this point if you don’t want vegetables.
- Add the vegetables, stir and allow simmer for a few minutes.
- Serve with any swallow of your choice. Enjoy!
