Babies can be very fussy about what they eat, so mums are advised to try to make their meals as tasty as possible while giving them the required nutrients.
Adding ripe plantain to your baby’s puree gives it a better taste. It is also a nutritious addition to your baby’s meal, particularly when you are weaning your baby. Ripe plantain is a much loved food in Nigeria by kids and adults alike, so why not introduce baby to its taste early too?
Ripe Plantain contains a good amount of Vitamin C which plays a major role in the formation of bones and teeth. It also contains Vitamin A, as well as other essential vitamins and minerals. In addition, it contains fibre which is good for digestion. Carrots are vegetables and helps with good vision for your baby.
This meal is good for babies 6 months and upwards.
PLANTAIN AND CARROT PUREE RECIPE
Ingredients:
1 medium ripe plantain
1 carrot
2-4 tbsps of steamed and flaked fish
Fish stock
Water
Method:
Peel and cut plantain into about four pieces. Cut carrot into two or three chunks too and place all into a cooking pot. Add about a cup of water and cook for 15 – 20 minutes to soften. Drain off the water into a bowl.
Put both the plantain and the carrots in a blender, add some of the fish stock and puree to a smooth consistency or leave some chunks if it is for older babies.
Pour in a bowl, mix in the flaked fish and serve.
