In Nigeria, Chicken is usually high on the list of foods served during festive seasons and every chicken lover enjoys the KFC style Chicken for its spicy crispiness. The good news is, you can make this crispy fried chicken by yourself and even better than those sold at eateries. And as our recipes are all about flexibility, you can also vary the spices to suit your taste.

So, let’s cook!

INGREDIENTS
  • 1 Kg Chicken Pieces (Boneless) – Don’t use Frozen Chicken, or allow the Frozen Chicken cool and then pat dry with a kitchen towel
  • Nosak Famili Vegetable Oil

Spices

  • 1 Teaspoon Paprika (or Dried Chili Pepper)
  • 1½ Teaspoon Dried Cayenne Pepper
  • 1 Teaspoon White Pepper
  • 1½ Teaspoon Garlic Powder
  • 1½ Teaspoon Onion Powder
  • 3 Crushed Bay Leaves/ 1 Tablespoon Thyme
  • Powdered Seasoning
  • 1½ Teaspoon Sugar
  • 1½ Teaspoon Salt

To Marinate

  • 2 Cups Buttermilk (or mix Milk and Vinegar/Lemon Juice)
  • 2 Eggs

Flour Coating

  • 2 Cups All Purpose Flour
  • ½ Cup Corn Flour (Corn Starch)
  • 1 Teaspoon Baking Powder
COOKING DIRECTIONS
  1. In a mixing bowl, add the paprika (or chilli powder), cayenne pepper, onion powder, garlic powder, white pepper, thyme, salt, and brown sugar for your spice mix. Mix well and set aside.
  2. Flatten your chicken by placing in between cling film and lightly pound using a meat mallet or underside of a saucepan until you get an even size.
  3. In a large bowl, add two cups of butter milk, eggs and 4 tablespoons of your spice mix and mix well.
  4. Then, dip your chicken in the marinade, cover, refrigerate and allow to marinate for about 2 hours.
  5. After taking out the chicken, allow to cool at room temperature for about 30 minutes.
  6. In another bowl, add flour, 2 tablespoons of your spice mix, baking powder and corn flour; mix well.
  7. Then, heat up your frying oil in a pan.
  8. Remove the chicken pieces from the marinade and coat with the flour mixture. Repeat coating in marinade and flour mixture; do this for each piece and set aside.
  9. Place coated chicken pieces in hot vegetable oil, being careful not to overcrowd the pan. Fry until golden brown and place in a wire rack to for oil to drain.
  10. Serve hot with any dish of your choice or enjoy alone with hot sauce.

Side Note: If you don’t have butter milk, mix 1½ cups of milk and 1½ tablespoons of lemon juice, allow sit for 5 minutes and your homemade buttermilk is ready.
